Carrot Cake That’s Worth The Calories

At Lily’s, we love our carrot cakes as much as you do. So when we set out to create our own, we asked ourselves one simple question: “What matters the most?”. 

The answer came quickly, with a dose of philosophy. In today’s society, every calorie that we consume has to count. It should be satisfying enough to justify the hours working adults spend burning it off at the gym, delicious enough for parents to feel good about introducing it to their children, and comforting enough for seniors to enjoy. Most importantly, it had to be good enough for us to want to eat it, again and again.

The brief was drawn up. It had to be distinctively American in retaining its hearty, moist and spiced characteristics, yet the cake itself had to be light and tasty in a classic French style. At the same time, we wanted to be able to see our generous shreds of Australian carrots, finely chopped pecans and walnuts, and juicy raisins, as we savoured each bite. 

That is how Lily’s carrot cake was born, with its comfortingly hearty layers of cream cheese, fragrant cinnamon, distinctively light cake layers with their visible carrots, walnuts, pecans, and plump raisins, coupled with moistness in every bite.


Where Craft Meets Conscience

Like everything we make at Lily’s, our carrot cake reflects a belief in the balance of taste, quality, and purpose. Each carrot is hand-selected for its natural sweetness and colour, then shredded to achieve the perfect combination of texture and flavour. 

Then comes the frosting (spoiler alert: it is a game-changer). We skip the overly sweet versions found in commercial bakes. Instead, ours is smooth, tangy, with just the right amount of sweetness. Made with premium cream cheese and a whisper of citrus, it perfectly balances the richness of the cake whilst keeping things bright and moreish.

Our gorgeous golden hue comes entirely from real carrots and spices – no artificial colouring at all. It is our quiet stand for purity, health, and natural beauty. Amidst growing concerns about synthetic dyes, especially for children, we proudly let nature do the work. The cake’s deep orange tones are proof that good ingredients do not need enhancing; they simply shine on their own.
